6 Make-Ahead Meals You Can Have in Your Hotel Room

Face it! Dining out morning, noon and night on vacation can be budget busting. With a little bit of creativity and some preparation, you can pack healthy meals to last throughout your stay. Here are some amazing ideas for you to bring on the road:

Breakfast

If you’re planning to stay at an RLHC hotel, fuel up each morning with our complimentary breakfast. But if sleeping in sounds more enticing, come ready with some of our favorite hacks for early morning nourishment.

Pack-n-Go Oatmeal

What You’ll Need:

Steal cut oatmeal
Muffin tin
Gallon baggie
Toppings

Prep Before:

  • Cook the oatmeal as directed on the package. Add your favorite flavors to the oatmeal if you wish. We like cinnamon, vanilla and a touch of brown sugar!
  • Divide scoops into an ungreased muffin tin.
  • Freeze until ready to remove. Make a water bath in the sink to loosen from the tin.
  • Place muffin pucks into a freezer baggie.

In Hotel:

  • When the time comes for warming up, microwave for 1 minute, then 30-second increments if not warmed completely through.
  • Dress it up with fresh berries, nuts, or a touch of peanut butter. Tip: Save space – keep a dollop of peanut butter in a sandwich baggie and cut the corner to dispense.

Breakfast Burrito

What You’ll Need:

1/4 cup diced onion
1/4 cup diced pepper
6 eggs
5-6 pieces chopped sausage or bacon
Cheese
Milk
4 tortillas

Prep Before:

  • Cook your choice of breakfast meat and sauté the onions and peppers in a pan. Add salt and pepper to season.
  • Crack the eggs and add a touch of milk and beat. Add the eggs to the pan and cook until eggs are set.
  • Divide the egg mixture onto the 4 tortillas and sprinkle with cheese.
  • Tip: If you have cilantro on hand, chop and sprinkle on top.
  • Fold the burritos up and place in baggie and into the freezer.

In Hotel:

  • Warm for 1-2 minutes. Enjoy!

Lunch

Bringing granola bars, trail mix and fresh fruit helps keep your hunger at bay throughout the day, whether you’re on the road or exploring the city. If you’re in the mood for a warm meal, check out our soup recipe:

Tortilla Soup

What You’ll Need:

1 bunch thinly sliced scallions
2 cups shredded rotisserie chicken
1 can diced tomatoes
4 cups low-sodium chicken broth
1/4 tsp cayenne pepper
Dash heavy cream
1/4 cup shredded cheddar cheese
Tortilla Chips

Prep Before:

  • Sautee the sliced green onions in olive oil until softened.
  • To the pot, add chicken, tomatoes, broth and cayenne pepper. Stir and let simmer for 20 minutes. Add a dash of cream and a 1/4 cup of cheddar cheese and warm through. Season with salt and pepper.
  • Divide into microwave safe containers and freeze. Tip: Using a muffin tin to freeze could work here, too!

In Hotel:

  • Use 2 pucks per serving in a microwave safe container.
  • Warm up for 3-4 minutes.
  • Top with crushed tortilla chips.
  • If desired, top with cheddar cheese or scallions.

Dinner

Dinner is the most common time to eat out and easily the most expensive meal of the day. Save money and save your waistline with these two filling recipes:

Fried Rice

What You’ll Need:

1 bag instant rice
1 bag frozen peas and carrots
1/2 cup chopped onions
2 eggs
Fresh or ground ginger
1 clove garlic (minced)
Soy sauce

Prep Before:

  • On medium heat, start by sautéing garlic, onions and ginger in an oiled skillet or wok.
  • Prepare rice as directed. Add rice to skillet and stir together.
  • Add the bag of peas and carrots and cook through.
  • Make a well in the middle of the pan to crack eggs and scramble in the middle. Once eggs are partially cooked through, mix all together.
  • Sprinkle on soy sauce to taste.
  • Add to individually portioned Tupperware or a single container and freeze.

In Hotel:

  • Microwave for 3 minutes when ready.

Chicken Fajitas

What You’ll Need:

1 cup shredded rotisserie chicken
1 red and green bell pepper
1/2 medium onion
1/2 tsp cumin
1/2 tsp chili powder
Tortillas

Prep Before:

  • In a skillet, add sliced bell pepper and onion and sauté until onions are translucent.
  • Sprinkle in the cumin and chili powder. Add salt and pepper to taste.
  • Add shredded chicken to pan and cook until warmed through.
  • Put in a microwave-safe container and freeze.

In Hotel:

  • Warm up for 2 minutes and serve on tortillas.
  • Build it up with cheddar cheese, sour cream or salsa.

Dessert

Indulge in this late-night, all-for-yourself treat:

 Brownie in a Cup

What You’ll Need

Mug
Baggie (x2)
1/4 cup powder sugar
1/4 cup flour
2 tbsp cocoa flour
Pinch of salt
3 tbsp water
2 tbsp olive oil

Prep Before:

  • To a sandwich baggie add dry ingredients. Measure out liquid ingredients into remaining baggie.

In Hotel:

  • When temptation calls, grab your mug and dump dry ingredient baggie into the cup and clip the corner of the liquid baggie to dispense. Stir and mix well. Microwave for a minute and a half.
  • Contain your excitement, wait a minute for it to cool down and enjoy!

In order for this plan to go off without a hitch, make sure you request a room with a mini fridge and microwave. Don’t forget to pack these extra essentials:
